My local way of preparing rice

    It is another lovely Sunday and it is our creative Sunday, I wish us all a prosperous week, today I will be showing us another way, or should I say my local way of preparing rice.

    For this meal I do not need many recipes, it is not our normal way of preparing rice, I can also call it low-budget rice because everything should be economized now since the country is not smiling anymore.

    STEP 1️⃣
    The first thing I love to do when preparing any starchy food is to parboil it to remove excess starch from it and also rinse thoroughly, that was the first step I did with my rice, I parboiled it and rinsed with water until I got a very clear water coming out of my sieve.

    STEP 2️⃣
    I put all my ingredients together and prepared them, firstly I soaked my crayfish with salt to make the dirty settle at the bottom of the plate then I sieved the crayfish out and poured the dirt away, secondly I washed my locust beans, mostly it does have tiny stones and to avoid this I need to rinse thoroughly.

    Another thing I did was to wash my pepper and use my hand blender to do justice to that, after blending my pepper I added the crayfish into the blender and blended.

    Also, I sliced my onions in a circle shape, I washed my scent leaves also and I sliced it as well then set all my ingredients aside for later use.

    STEP 3️⃣
    In my pot, I added my red oil then allowed it to heat for some minutes, I do not bleach the oil just for a few minutes to get hot then I added my onions into the oil and allowed it to fry for some minutes before adding my pepper and crayfish into it, I stir it to mix and allow it to fry for some minutes before adding my locust beans into the sauce. I then added my seasoning cubes added a little bit of salt, stirred together, and tasted, at this point adjusted the salt because I would be adding water to it so that the rice could cook very well. I later added my meat into the sauce and then covered it to cook for some minutes.

    STEP 5️⃣
    After some minutes of boiling, I added my parboiled water into the sauce and stirred to combine all the ingredients with the rice and also give me that lovely taste I desired, I covered my pot and allowed it to cook on low heat, and after some minutes I checked back to see if the water has reduced or if there is no water again, so I used my cooking spoon to turn the sides so that I can see the under then I covered again because there is still water.

    When the water dried and my rice was done cooking I added my scent leaves and stirred, covered it to cook on low heat, after some seconds I turned off the cooking gas and spread the remaining onions on it and stirred, cover it to steam together then our food is ready.

    This is another way of preparing rice whenever I am bored of eating white rice and stew, I can just make this and it is so yummy.

    You can try this at home too, very delicious and doesn't need too many ingredients.
