    I welcome you all to the last edition of Creative Sunday in the year 2023, I wish us all a prosperous new year in 2024

    Today I will be showing us the steps I used and the ingredients used in preparing my party jollof rice

    LISTS OF INGREDIENTS
    Mixed pepper
    Salt
    Stock cubes
    Butter
    Vegetable oil
    Onions
    Foil paper (optional)
    Tomato paste

    STEP 1:- Firstly I love to parboil my rice to reduce excess starch which is also known as carbohydrates, this process reduced it, after parboiling the rice the next step is to rinse thoroughly till the water is white and there are no traces of starch in it, I do this process under running water and pour in a sieve to drain the water away. Some people don't like to do the process but you can also add salt to wash your rice and reduce the starch, we are still on the same path, all we want is to reduce excess starch from our rice.

    STEP 2:- Rub my pan with butter, I love this process so much not to burn your rice but to add another flavor to the food, after the process add your vegetable oil, leave for some seconds in other to get hot then add your onions, I love onions so I can not do without onion in my food, onions gives the food a special taste and flavor, what is jollof rice without onions.

    STEP 3:- allow your onions to fry and release their juice inside the oil before introducing your tomato paste, give this a thorough frying on low heat, this process takes about two minutes because we need to reduce the sour taste of the tomato before adding the pepper mix, the pepper mix consist of tomato, scotch bonnet pepper, red bell pepper 🌶️ and so on.

    STEP 4:- After adding your pepper mix leave it to fry for some minutes then add your necessary ingredients like stock cubes, salt, curry, thyme, seasoning, and your Bay leave, taste for adjustment if there is any need, I cover the sauce for some minutes before adding water in to.

    STEP 5:- You need to be careful while adding water, your rice will not look nice if soggy in water, just add water but by bit, I didn't add water once because I had already parboiled the rice and it will not take time to cook, I added little water and stir it together so that all the ingredients will incorporate into the rice and gives me a nice flavor.

    STEP 6:- I cover my pan with foil paper before the Normal cover, this is because I want my rice to cook on heat, I do not want any heat to escape and I reduced my gas to low heat so that the rice can cook well and not start to burn from the beginning. That is the work of the foil paper. Leave this for some minutes but always check if the water is getting dry or if the rice is cooked already.

    STEP 7:- As you can see when the rice is done I added butter to it, which gives it the finishing flavor and shinning look, my rice is not dry, it looks enticing, that is the effect of the butter on it, try this at home and see if you will like it.

    I did pepper meat, this doesn't take much, it is just our normal way of roasting our meat with pepper, the reason why I did the pepper meat was that I had already fried the meat yesterday and kept it in my refrigerator, so my visitors will not like been served with cold meat so I just need to mix it with pepper so that it will add more flavor to the food.
