COOKING TWO DIFFERENT TYPES OF VEGETABLES

    I welcome you all to another edition of Creative Sunday and I wish us all a prosperous new month and week, today I will be making vegetable soup, this type of vegetable is my first time trying this out, this vegetable consists of two types of vegetables, and I learn this combo from my sister and I think it will be nice to try it out.

    I love to stick to one vegetable anytime I want to prepare vegetable soup but today I tried out the combination of two vegetables and it came out well, today I will be sharing with us the steps I took in making this soup.

    Ingredients used
    Spinach (it is called Lagos spinach)
    Ugwu leaf
    Crayfish
    Cowskin
    Red oil
    Onions
    Pepper mix
    Seasoning powder
    Dried fish

    Firstly I parboil the spinach for a minute to get rid of the fertilizer used in producing it, I did that a day before making this soup preserved it in a white cellophane, and put it in the freezer.

    I rinsed the ugwu leaf and put it in a sieve so that it would filter out the water, then set it aside, the next step is to de-bone the dry fish I will be using, rinse it well and set it aside for later use.

    The next process is to parboil the fish add seasoning cubes and salt to it then boil the cowskin together with it because the cowskin is a bit harder, so I want it to be soft and I left it for two minutes.

    In another pot, I add my red oil and allow it to heat for a minute then I add my pepper mix (the pepper mix consists of pepper tomato, bell pepper, and onion) and use my cooking spoon to turn it over then leave it to fry for some minutes before adding crayfish and seasoning powder into it, after some minutes I transferred my cooked fish into the sauce I am making and dice the cowskin into it as well then cover for a minute to incorporate together.

    After a minute I added the Lagos spinach first and mixed it thoroughly for a minute before introducing the ugwu leaf into it and mixing well, leaving for minutes and tasting, I saw that it needed a little seasoning powder so I added it and mixed and leave it to steam for a minute, that is the end, it doesn't take long in as much your ingredients are available and you have prep everything before starting your cooking.
