    Happy week, Hive Food friends! Today I want to share with you a recipe that I made last Sunday to share with the family. It's about Pork Ribs in baked barbecue sauce, accompanied with a boiled cassava contour and a delicious green sauce. Let's see the ingredients and the preparation.

    ¡Feliz semana, amigos de Hive Food! Hoy quiero compartir con ustedes una receta que realicé el domingo pasado para compartir en familia. Se trata de unas Costillas de Cerdo en salsa barbacoa al horno, acompañadas con un contorno de yuca hervida y una deliciosa salsa verde. Vamos a ver los ingredientes y la preparación.

    The ingredients we will need are / Los ingredientes que necesitaremos son:

  • 1 Pork ribs
  • 1 Costillar de cerdo.
  • Mustard, ketchup, soy sauce, honey, vinegar, salt
  • Mostaza, salsa kétchup, salsa de soya, miel, vinagre, sal.
  • 1 ½ of Cassava
  • 1 ½ de Yuca.
  • Chives, onion, bell peppers, sweet peppers, garlic, cilantro or parsley
  • Cebollín, cebolla, pimentón, ají dulce, ajos, cilantro o perejil.
  • Preparation / Preparacion:

    We start by placing the ribs to boil with spices such as salt, oregano, garlic powder, adobo and cumin to take flavor. We leave it to soften for approximately 1 hour.

    Iniciamos colocando a hervir la costilla con especias como sal, orégano, ajo en polvo, adobo y comino para que vayan tomando sabor. Dejamos ablandar por 1 hora aproximadamente.

    While the ribs are cooking, we are going to make the barbecue sauce, for this we are going to mix in a bowl mustard, ketchup, soy sauce, vinegar and honey; stir and add salt to taste. Once ready, set aside.

    Mientras se cocina la costilla, vamos a realizar la salsa barbacoa, para ello vamos a mezclar en un tazón mostaza, salsa tipo kétchup, salsa de soya, vinagre y miel; removemos y agregamos sal al gusto. Una vez lista reservamos.

    Then we transfer our previously boiled ribs to a baking dish, and we bathe them with the barbecue sauce on all sides, to bake for about 30 minutes on each side.

    Luego pasamos nuestras costillas previamente hervidas a una fuente apta para horno, y vamos bañando con la salsa barbacoa por todos los costados, para llevar a hornear por unos 30 minutos por cada lado.

    While the ribs are baking, cook the cassava until it softens.

    Mientras se hornea la costilla cocinamos la yuca hasta que ablande.

    In the same way, we are going to make the vegetables of our green sauce transparent.

    Del mismo modo, vamos a transparentar los vegetales de nuestra salsa verde.

    Then we blend it with salt and vinegar until it reaches its point and set aside.

    Luego licuamos con sal y vinagre hasta que llegue a su punto y reservamos.

    When half an hour has passed, we turn the ribs over, add more sauce and let them bake for another half hour.

    Cuando haya pasado media hora, volteamos la costilla, colocando más salsa y dejamos hornear por media hora más.

    Once well browned, this is how our pork ribs turn out, a delight accompanied by boiled cassava and green sauce.

    Una vez bien doradas, así quedan nuestras costillas de cerdo, una delicia acompañadas por yuca hervida y salsa verde.
