I welcome you all to another episode of Creative Sunday, today I am trying out a new recipe, I found this soup made by @george-dee so I decided to give it a try.
Lists of ingredients
First of all, I remove the backs of my peanuts and thoroughly clean them to avoid adding an unpleasant taste to my soup. This involves getting rid of any dirt and burned peanuts.
Next, I blended the peanuts using my blender; if you don't have one, you can still use a mortar and pestle, which will work just as well.
After blending, I took it out of the blender and placed it on a clean plate. I then rinsed the blender, set the water aside, and proceeded to blend my pepper.
The next step is to season and boil my meat. I add a little water and boil it for two minutes, after which I add my fish to steam with the meat for one minute. I then remove the fish and proceed to cook the soup.
Once the meat was cooked through, I added my blended pepper and let it boil for two minutes. I then checked to see if I had added enough seasoning; if not, you could add more seasoning cubes. Next, I added a small amount of red oil, because groundnuts naturally have their own oil, so I don't add much and I let it boil for an additional minute.
The aroma wafted from my pot when I opened it after this process, and I proceeded to soften the texture of the blended peanut paste by adding a small amount of water before adding it to my soup. The paste looked firm despite the mixing
I then added the peanut paste to the broth and covered it to cook on low heat for an additional eight minutes on a very low heat. When I checked again, the soup was ready, so I added my pumpkin leaves as a garnish to make it look better and taste good.
This soup is full of health benefits Groundnuts are high in zinc and vitamins, and they also contain a good amount of protein and fiber, that curbs your appetite and helps to control blood sugar levels, reducing the risk of heart disease.
