It looks nice and amazing to see a martial art demonstration. Everything is clean and nice. You can see each move clearly. It looks that good and clean because what you see is well planned before and practiced like that.
You will also see some fancy moves that look amazing! You can do that for demonstration, but when you are in a fight even in a fighting competition, you cannot do a lot of things.
If your life is in danger and you are under pressure, you might not remember most of the things. So if your focus is to learn self-defense, you should choose martial arts that focus on that and learn moves that are applicable in real life.
