Hola amigos de esta bonita comunidad de HIVEFOOD – 3SPEAK - HIVE.
Espero se encuentren todos muy bien y estén pasando un fin de semana largo, de la mejor manera posible; Como todos los años, en casa preparamos las comidas tradicionales para estas fechas, y junto con mi esposa Zuni, quien es paraguaya, les queremos mostrar como hacemos nosotros la CHIPA PARAGUAYA, tradicional de su país (PARAGUAY).
TODOS los créditos y los aplausos, son para ZUNI, que próximamente estará creando su cuenta en #Hive; Yo solo soy el camarógrafo y el degustador de tamaña exquisitez.

Como dijimos, existen muchas maneras de realizarla.
Aquí la forma como lo hacemos nosotros.
CHIPA PARAGUAYA.
INGREDIENTES:
- 500 g HARINA DE MAÍZ,
- 500 g ALMIDÓN DE MANDIOCA/YUCA,
- 1 Cucharita ANÍS,
- 100 g QUESO RALLADO,
- 1 cucharita POLVO DE HORNEAR,
- 300 g QUESO CASCARA COLORADA,
- 4 HUEVOS,
- 300 g GRASA PORCINA
- 1 Cucharita SAL
Tal cual, lo mostramos en el video; Disolvemos la grasa, hasta dejarlo bien homogénea; Luego incorporamos los huevos y mezclamos. También incorporamos las harinas y el anís, para seguir mezclando todo, hasta lograr una masa maleable.

CHIPA PARAGUAYA.
INGREDIENTS:
500 g CORN FLOUR,
500 g MANDIOCA/YUCA STICKS,
1 teaspoon ANISEED,
100 g GRATED CHEESE,
1 teaspoon BREADING POWDER,
300 g COLORED CASCARA CHEESE,
4 EGGS,
300 g PORK FAT
1 teaspoon SALT
As shown in the video; we dissolve the fat until it is homogeneous; then we add the eggs and mix. We also incorporate the flours and the aniseed, to continue mixing everything until we get a malleable dough.
Luego empezamos a dar las diferentes formas, como lo hacían nuestras abuelas y vamos colocando en las diferentes asaderas para llevarlo al horno. Como cada horno es diferente, para saber cuando está cocido, es cuestión de ojo, según Zuni. Cuando empieza a tomar color, ya se puede ir sacando las bandejas del horno, para que no se sobrepase de cocción y salgan duras.
Then we begin to make the different shapes, as our grandmothers used to do, and we place it in the different roasting pans to take it to the oven. As each oven is different, to know when it is cooked, it is a matter of eye, according to Zuni. When it begins to take color, you can remove the trays from the oven, so that it does not overcook and come out hard.
