    Today, I prepared Melon and vegetable soup.

    Many Nigerians prefer to call it Egusi and vegetables, it is one of the soups that connects all tribes in Nigeria. I don't know if the northerners eat it but I can tell that almost all other tribes eat the soup.

    I have seen people say that they don't eat a particular soup but not Egusi. My siblings call it a sacred soup because it goes well with any kind of swallow meal. It is easy to prepare, it doesn't take much time to prepare and tastes delicious if prepared properly.

    Let's get to the recipes; these are things we can easily get and they aren't expensive so no one needs to break the bank to have this delicious delicacy.

    • Chicken
    • Egusi (Melon)
    • Cowskin
    • Bitter leaves
    • Basil leaves
    • Seasoning
    • Onion
    • Palm oil

    Preparation.

    Remember health is wealth so before anything is done, all the recipes must be properly cleaned. Cooking isn’t just about making a meal, it involves cleanliness as well so let's do it right.

    The first thing I did was to process the recipe before going into the preparation properly.

    • Rinse and boil the chicken with seasoning.

    • Slice and wash the leaves.

    • Blend the pepper and onion.

    • Wash the Cowskin

    • Slice the onion.

    • I heat the palm oil in the pan first before adding onions and the cowskin since I didn't boil it with the chicken. It fried for about 30 seconds before putting the chicken, pepper and seasoning. I allowed everything to fry for some minutes under low heat.

    • I added a little water to the Melon and mixed it before pouring it into the fried stew. I stirred the mixture well so that the melon and stew would blend before covering the pot and allowing it to cook for another few minutes.

    • I added the vegetables and stirred again. This time, I allowed everything to cook for just two minutes and that's all.


    Melon soup is quite economical depending on what you decide to add to your soup. It is also nutritious and medicinal due to the presence of the leaves.
