This is another beautiful Sunday, I welcome you all to my blog and I wish us all a happy new month and a prosperous new week.
Today I will be cooking party jollof rice, so bring your chair grab a cup of juice, and let us cook together.
INGREDIENTS USED
💗Tomatoes sachet
💗Pepper mix (combination of fresh pepper, tomatoes, bell pepper)
💗Onions
💗Crayfish
💗Curry
💗Jollof rice spice
💗Seasoning cubes
The first thing I did was to blend my pepper then parboil it and keep it inside the refrigerator, I did this the night before preparing my food, In my opinion I believe parboiling your pepper mix gives your jollof rice a better and perfect taste than using the pepper like without parboiling it.
I bring out all the necessary ingredients I will be using for my jollof rice and set them aside
I started with my onions, peeled the back then rinsed them before dicing them after that I placed my cooking pot on my gas and added my vegetable oil, leaving it to heat for some seconds before adding the onions.
I poured in the onions then allowed it to release the juice into the oil and allowed it to turn brown before introducing my tomato paste into the oil. In making jollof rice we need to take our time to fry the Tomato paste very well so that it will not taste sour and the odor will disappear.
After frying for some minutes I noticed the oil was now at the top of my sauce when I confirmed that it was perfectly okay, I went in with my pepper mix since I had already parboiled my pepper so it would not take long to fry, I fried the pepper mix then added my crayfish, salt, and my seasoning cubes, mix thoroughly and allow to fry, always mix so that the sauce will not get burnt.
The next step is to add enough water that will cook the rice since I didn't parboil my rice, I left it to boil very well and then tasted it for seasoning, after boiling I poured in my washed rice and stirred it thoroughly, (never stir your rice with iron spoon) always take note of that, you can as well stir with a spatula if you do not have a silicone spoon. Allow it to cook but always check from time to time so that it will not be burning from the start.
Finally, I checked the rice maybe it needed more water but the rice was perfect and no water so I left it on low heat to get that burnt party, if your jollof rice did not burn that is mixed rice not jollof rice, who likes the burnt part I'm jollof rice because that is what I love most.
