¡Hola amigos de la plataforma de #Hive y de esta hermosa comunidad de #Hivefood! Bienvenidos a una nueva receta en mi canal. Hoy vengo a traerles una receta muy sabrosa, con pocos ingredientes, fácil de preparar, si lleva bastante tiempo, pero les aseguro que vale la pena.
Hoy les traigo un osobuco tan tiernizado, que se corta simplemente con el tenedor, acompañado con un delicioso puré.
Para el Osobuco:
1 KG de osobuco
Un chorro de aceite
2 Cebollas
1 Morrón
1 vaso de vino tinto
Caldo de verduras
Ají molido
Pimienta
Ajo picado
Para el puré
1 KG de papas
Un chorro de leche
Manteca
Sal
Pimienta
Nuez Moscada
Queso Rallado
Vamos a comenzar sellando el osobuco por ambos lados en una fuente con aceite. Una vez estén bien sellados vamos a agregar la verdura.
Yo le agregué ajo, cebolla y morrón. Si gustan pueden agregarle alguna otra o incluso cambiar alguna de las usadas.
A continuación le agregamos los condimentos, ají molido y pimienta. Como yo use un caldo de verduras de los que vienen en cubitos, no le agregue más sal, justamente porque el caldo ya trae bastante. Si usan un caldo casero, agreguen sal a gusto. Junto con el caldo se agrega la copa de vino, que le va a dar un sabor único.
Después de revolver unos minutos, lo tapamos y lo llevamos a horno mínimo, lo más bajo posible, por tres horas. ¡La carne va a salir totalmente tiernizada!
Una vez que hayan pasado dos horas de que llevamos la carne al horno, vamos a ponernos a hacer el puré para acompañar nuestra carne. Primero vamos a poner a hervir las papas hasta que estén bien blandas. Después les quitamos el agua y llevamos a fuego mínimo.
Le agregamos la manteca, un buen chorro de leche y empezamos a pisarla para que no quede ningún grumo.
Una vez que terminamos de pisar el puré apagamos el fuego y le agregamos sal, pimienta y nuez moscada a gusto.
Y el puré ya estaría listo, pero a mí me encanta darle un toque de sabor agregándole queso rallado, es totalmente opcional pero realmente queda muy sabroso.
Y ahora sí, una vez se complete el tiempo de cocción de la carne, ¡es hora de disfrutar!

For the mashed potatoes
1 kg of potatoes
A dash of milk
Butter
Salt
Pepper
Nutmeg
Grated cheese
We are going to begin by sealing the ossobuco on both sides in a dish with oil. Once the ossobuco is well seared, add the vegetables.
I added garlic, onion and bell bell pepper. If you like, you can add any other vegetable or even change some of the ones used.
Then we add the seasoning, ground chili and pepper. As I used a vegetable broth that comes in cubes, I did not add more salt, just because the broth already has enough. If you use a homemade broth, add salt to taste. Together with the broth, add the glass of wine, which will give it a unique flavor.
After stirring for a few minutes, cover it and put it in a low oven, as low as possible, for three hours. The meat will be completely tender!
Once two hours have passed since we put the meat in the oven, we are going to start making the mashed potatoes to accompany our meat. First we are going to boil the potatoes until they are very soft. Then we remove the water from them and take them to a minimum heat.
We add the butter, a good splash of milk and start mashing them so that there are no lumps left.
Once we finish mashing the puree, we turn off the heat and add salt, pepper and nutmeg to taste.
And the puree is ready, but I love to give it a touch of flavor by adding grated cheese, it is totally optional but it is really tasty.
And now, once the cooking time of the meat is completed, it's time to enjoy!
