    Hello everyone, welcome to another episode of Hive Learner's Creative Sunday Initiative with George Dee. Every Sunday, community members get to share creative stuff on Hive and I always look forward to it.

    As usual, I made something yummy for today's entry. Although it's not a soup but you're definitely going to love it. I had a few pieces of plantain lying around in the kitchen so I thought of breaking the rice and spaghetti cursed breakfast. A lot of Nigerians, just like me are stuck with the same breakfast routine and even when we have the opportunity of making a difference, letting go of that routine becomes difficult.

    Initially, I thought of frying the plantain and just having it with rice but my taste buds wanted something extra yummy so I decided to boil the plantain and make vegetable sauce to it. It is not my first time having boiled plantain with sauce but it's my first time having it with vegetables.

    Being the type who loves vegetables a lot, I think Vegetables would be a perfect choice for me henceforth because the outcome of the combination was great and it didn't cost me much money or waste my time, the recipes are cheap and quite easy to prepare.

    Plantain
    Pumpkin leaf
    Pepper
    Stockfish
    Smoked fish
    Palm oil
    Onions
    Seasoning
    Cowskin

    Preparation


    I started with cleaning the recipes properly and we must always remember that health is wealth. After cleaning, I sliced the pepper, onions and pumpkin. I shredded the smoked fish, cut the cowskin into smaller sizes and soaked the stockfish in hot water.

    • I boiled the plantain without peeling the back, my mom does it that way and I just do the same too. After the plantains were properly boiled, I put them aside and started preparing my vegetable sauce.

    • I heated my pot first before turning a small quantity of palm oil into it. I used just a small quantity since it wouldn't be nice for the sauce wouldn't be too oily in the end.

    • I added the cowskin and fish first and stir fry before adding onions.

    • The pepper came in after and I added the seasonings and then allowed it to fry for about 7 minutes under low heat, the goal is to make the cowskin and fish absorb the seasoning as well.

    • After 7 minutes, I added the pumpkin and allowed it to fry further under low heat for a few minutes.

    • I eventually peeled the plantains and cut them into smaller pieces on a plate. I added the sauce and voila, it was perfect.


    Plantain is rich in vitamins and can be taken for breakfast, bringing your vegetable sauce only takes the nutrients and taste to a whole new level.

    If you haven't tried this, you should because you are definitely going to fall in love with it.
