    Hello everyone, welcome to another episode of Hive Learner's Creative Sunday Initiative with George Dee. It's a beautiful Sunday morning and I hope we all had a great weekend.

    Sunday is one awesome day I am always looking forward to because of the Creative Sunday Initiative I get to share things happening in my kitchen while other participants also share awesome things that I learn a lot from.

    For this Sunday's Creative Sunday Initiative, I prepared a snack. This delicious snack is made from plantain and I can bet that you will fall in love with this snack if you try it out.

    I have shared a few plantain recipes on Hive but this is different, very easy to prepare, it's nutritious and economical as well. This snack is known as Plantain Fritters but it's an upgrade to my usual preparation, it can be served as a meal or just an appetizer depending on the quantity prepared but something is certain, you will always want more of this snack.

    *** As I mentioned earlier, the plantain fritters is quite economical and you can tell from the ingredients.***

    Ingredients

    1. Plantain
    2. Flour
    3. Baking powder
    4. Carrot
    5. Pepper
    6. Sugar
    7. Salt.
    8. Crayfish
    9. Groundnut oil
    10. Onion.

    These are simple and cheap ingredients, they don't cost much so you can try it out.

    Preparation

    Plantain Fritters is easy, it is easier than the plantain puff I shared some time ago since you won't be needing yeast and the waiting time for it to swell.

    I started with cleaning and processing all the recipes that needed to be processed.

    • I removed the plantain back and cut it into smaller pieces.

    • There was no electricity at the time I made this so I used a small mortar to pound the plantain. If you are using a blender, don't add much water to prevent the blended plantain from becoming watery and I recommend pounding it as the best option.


    • I chopped the carrot into tiny pieces.

    • I blended the pepper with a hand grater and sliced the onions as well.

    After processing the recipes, I went into the preparation properly.

    -I turned the pounded plantain into a container and added flour first. The flour would serve as a thickener, enhance the taste and also boost the quality/quantity of your snacks.

    • Immediately I added the flour, I started turning the combo with a turning stick until the flour blended well into the plantain.

    • I added a pinch of salt, crayfish, pepper, onions, a teaspoonful of sugar and a small quantity of baking powder. After adding all these, I started turning the mixture again until they all blended into the plantain again.


    • I heated the oil and started cutting the mixture bit by bit with a spoon into the hot oil. I couldn't take my eyes off it because it can get burnt in the twinkle of an eye. I have to reduce and increase the heat but frying under low heat isn't advisable because the longer it takes to fry, the more the plantain fritters absorbs oil and it would ruin all the hard work you have put into preparing the snacks.

    • After frying, I removed the plantain fritters from the hot oil and turned them into a sieve to drain excess oil if there was any.

    • I repeated the process until I finished frying everything.

    • The outcome of the plantain fritters was really good and I enjoyed it.


    You can decide to eat plantain fritters with rice, beans, fried yam or potatoes. It would go perfectly with these foods and many others.
