    Hello everyone, welcome to another episode of Hive Learners Creative Sunday Initiative with George Dee.

    For today's entry to HL Creative Sunday Initiative, I shared a simple recipe that is economical, nutritious and very easy to prepare. This recipe fits well as breakfast and it can also be used as something to snack on.

    The recipe is known as Cabbage & carrot fritters, it's really yummy and you are definitely going to enjoy it. I came across this recipe online sometimes ago and didn't believe it would come out great but it did.

    Firstly the presence of cabbage and carrots made me want to try it badly because I am a huge fan of those two things.

    As we all know they are blessed with nutrients and since they make up the bigger percentage of this snack, it would be really great for the body as well.


    This recipe is economical as I mentioned earlier and with just $1 you can make this for your family. It was easier for me to prepare this because I have a few of the ingredients at home and just bought the rest with less than a dollar.

    Ingredients

    Carrot
    Cabbage
    Onions leaf
    Groundnut oil
    Eggs
    Onions
    Chilli powder
    Salt
    Seasoning Cubes
    Crayfish

    Preparation.

    I started by cleaning the recipe before processing them, let's always remember that health is wealth.

    After cleaning the recipe, I moved on to grating the cabbage and carrot. I used a plastic grater which made it quite challenging and it's best to use the steel type if you have it. It's important that you grate the cabbage and carrots, slicing or chopping them wouldn't give you the needed size and texture.

    I chopped the onion leaf and the onions as well. I also broke the eggs into a container to make them ready to be used.


    • I mixed the grated cabbage, carrot and onion leaf in a bowl.

    • I added the chilli powder, crayfish, onions, egg, a little salt and seasoning. I mixed them again until they had all blended in well in the bowl.

    • Finally, I added two handfuls of flour and mixed again. I made sure all the ingredients were completely mixed and set them aside.


    • I heated the pan and turned a very small quantity of oil into it. I allowed the oil to get hot a little, it mustn't be too hot so that what you are about to fry doesn't get burnt immediately and the frying must be done on low heat.

    • I took the mixture in the bowl with a spoon and put it in the hot oil.

    • I pressed the mixture down in the pan to make it flat and allowed that side of the pan to get brown before flipping it to the other side.

    • I tossed the mixture about in the pan a bit just to prevent it from sticking to the pan but if you have a non-sticky pan, you don't need to worry.

    • I flipped the sides repeatedly a few times and the snack was ready.

    The snack tastes really delicious and can be served with any juice of your choice.
