Today's recipe is a very delicious recipe. It is called Dum Pukht and to make it a whole lamb is fried and cooked in a clay oven. I have taken the whole legs part of a goat and today I have made it in clay oven fried roast. It is very tasty and very common spices are used in it. All spices are easily available in every home kitchen.
To make it, first of all, a whole piece of meat from the rear legs of a big goat was taken, weighing at least five to seven kilograms. I took a leg of a goat weighing seven kilos and washed it thoroughly with water. Then I made cuts in the middle on each side so that when the spices are applied, they will absorb well.
In the seasoning, red chillies, salt and Kashmiri red chillies were used and some lemon juice was also added. Then I lit the clay oven and when the coals were red, I put the goat thigh in the oven and closed it completely from the top and thus after thirty minutes Dum bkhud was ready and eaten with warm wheat bread.
