    Hello everyone, welcome to Hive Learners Creative Sunday Initiative with George Dee. It's less than 24hrs to Christmas and I can tell that a lot of people offline and online are excited about the celebration already.

    For today's Creative Sunday entry, I made a simple meal that fit into the celebration mood perfectly. To me, eating food like rice on Christmas is not my thing. Although, Christmas is just like every other day but I prefer local meals especially swallow meals.

    A lot of people love Jollof rice and others which is perfect with those fat chicken thighs. Jollof rice is one of the meals you will find everywhere on Christmas but it can be very expensive to prepare something yummy and nutritious as well. Despite the cost of everything in the market at the moment, preparing Jollof rice is very possible without you having to break the bank.


    For this Jollof recipe, I used Maraconi instead of rice and it still came out perfectly so you can enjoy anything Jollof with the similar recipes I shared in this post.

    Some time ago, I made a similar food and a woman told me that she doesn't like preparing Macaroni as Jollof because it doesn't taste well. I don't bother to ask how she prepares her Macaroni Jollof and just shared my recipe with her. After she tried it, she said it was lovely.

    This wouldn't cost you much and you will definitely enjoy this recipe.

    Let's move on to the process of preparing this simple Macaroni Jollof recipe.

    •I started with cleaning the recipe before processing what I needed, always remember that health is wealth.

    • I parboiled the macaroni first and while it was cooking, I did the other necessary things.

    • I sliced the onions, tomatoes, carrots, Greenpea, and onion leaves. I also blended the pepper as well.

    • After completing the slicing, cutting and dicing task, the macaroni was ready so I turned it into a rubber basket to drain the water. I set everything aside and went into the final stage of the preparation.

    I turned the groundnut oil into the pot and allowed it to get hot before pouring the tomato paste inside. The paste fried for a few minutes before I added the carrot and green pea.

    I added a cube of seasoning and salt immediately to make the recipes tasty. The onions and sliced tomatoes came in after, I allowed the combo to continue frying while I stirred to make sure that everything fry properly for about five minutes under low heat.

    I added the blended pepper as well and all the spices (curry, thyme, Jollof seasoning, salt and two cubes followed immediately. I stirred the sauce again and allowed it to fry for another five minutes under low heat.

    After the pepper had fried very well, I added some water because the macaroni wasn't properly cooked and I would need the sauce to complete the cooking.

    I allowed the sauce to get hot again and just turned the parboiled macaroni into it. I stirred to make sure that all the macaroni absorbed the sauce and allowed it to cook again for five minutes under low heat.

    Our Jollof Macaroni is ready.
