About a week ago, I shared the Sapin-Sapin recipe, a Filipino "kakanin" which I thought was intimidating at first.
Here, let me share to you the video process on how to make this delicious Pinoy treat.
Few tips I can share, it is really necessary to strain your mixture to remove the lumps of the glutinous rice flour and later on the purple yam and the jackfruit puree.
It is also much better to use one big mould than the smaller moulds I used on the video. Lastly, be sure to grease the mould generously as it would be hard to turn it over on a plate if you don't (it is sticky!)
As for the toppings, the sapin-sapin is best eaten with "latik" or toasted cocunut milk curds. You can make this my slowly cooking coconut milk until the oil separates and the curd is cooked to a slight brownish color. I have stored toasted coconut shreds so that's what I used instead.
