I welcome you alk to another episode of creative sunday, today i will be sharing with us how i do prepare my Nigeria jollof rice, i mean my own method of preparing this lovely delicacy.
INGREDIENTS
Tomatoes.
pepper
gizzard (optional)
vegetable oil
Salt
stock cubes
onions.
crayfish
tomato paste
Step 1
Wash all your veggies thoroughly before preparing them, after cleaning them blend your peper and tomatoes together

in a clean pot boil your rice to reduce excess of carbohydrates, after some minutes drained the water snd wash the rice thoroughly and set aside to drained the water, make sure the rice is inside a drainer to remove the water
Step 3
Proceed by boiling your blended pepper in other to drained the excess water and remove the raw flavour of the pepper and tomatoes, leave it to cook for 5 minutes before using.
Step 4
Move on to dice your onions in your preference snd set aside, you can also dice your protein as well if necessary.
Step 5
This step is where our cooking start, pour a little quantity of vegetable oil in your pot and leave it to hot for a minute tyen pour your onions into it, allow it to fry for some minutes under low it, observe it till it begin to turn brownish in color, after that pour in your tomato paste and fry ubder low heat as well, leave it to fry very well to avoid raw taste and soggy food.
Step 6
After frying the tomato paste, go in with your boiled pepper and fry as well, this process will only last for two to three minutes because we have already boiled it, add in your broth it is the same as the water gotten from your protein, check the sauce maybe you need to add some salt or seasoning cubes, adjust this by the cups of rice you are cooking.
Step 7
After this process, add little amount of water and cover the water to boil very well before adding your parboiled rice into it, after adding the rice into the water make sure you mix it thoroughly so that alk the ingredients will come in contact with each other, one part will not be left out, cover and cook on low heat, check it time to time to avoid burning when your rice has not cook, if you like you can cover your pot with foil paper to avoid escape of the heat.
Step 8
If your rice is done cooking, then you can garnish it with your onions, liver, tomato, carrot, green pea or any other vegetable you prefer, mixed together and cover it to steam with the heat not with hotness of the gas again, then you are good to serve, I paired mine with plantain and a little salad.
