Sun-dried black gram dumplings using traditional stone grinding tool

    Mom made this using traditional stone grinding tool that are almost going to extinct after few generations.

    At the age of 71, I am not sure, from where she gets so much of energy, that too after being admitted several times in hospital for long periods. We always have argument over this - I would tell her not to work so hard, but little does she listen. She says habits will go only with death. Yesterday morning when I came from the field after playing football, she was busy preparing these black gram dumplings and we had some arguments over this as well. She lifted that heavy stone grinder and that's not good for her. She did the preparation day before by putting the black gram over night, and she did not wait for me because, these dumplings must dry at least 75% same day, else it will be damaged. She should have told me, but then she feels, she won't give me work. We both have same feelings for each other.

    Apart from using the traditional stone grinding method, there is not much complexity here, but still I observed her till the end and helped wherever possible. You won't get the same quality in market because they always mix rice or other cheap components to sell it cheap. But then there is compromise in taste. There are so many varieties of dumplings that is prepared and sold at my place but this one is the best in terms of taste - using only the black gram. Soak 1 kg black gram over night and clean it well - the black skin will go away. Next day morning just grind it - you won't get the same taste , but that should be fine. I must say here that in rural areas, people still use these stone grinding tool for their everyday use and do not buy a grinder even though they can afford. The only reason of that is that the spice or masala prepared on this brings better taste. Old is gold - they know it and they are capable - so why not enjoy the better taste.

    The most important part of this is the fermentation - you should see the video to know how she knows when its ready - something very interesting I learned. She would ferment and then put a small piece in water - if it floats, then its ready. Amazing experience that is being transferred over generations.

    And then she would put these small dumplings on a plate - she asked me to apply ghee on this plate before. The reason she used ghee is that, she can consume this on all days ( on some holy occasions as well because oil is not permitted). But you can use oil as well, if that is fine with you. The point is that, these dumplings should easily detach after being dried and they would if the surface is slippery.

    It did dry almost 75% as she expected and she put it again today for the final dry.

    Looks good ? One of my friend came today and asked her to give some - she denied. My friend could figure out from the texture itself that its pure and home made. And to let you know, that traditional stone grinding tool means a lot to us - every house hold will have them because we worship that and its used in all our big festivals like thread ceremony and marriage. May be I will do a separate post on that.
