    Hello my dear cooking lovers! 👩🏻‍🍳

    Today I bring you one of the most traditional Christmas meals of my beloved Venezuela 🇻🇪, as many of you already know, La Hallaca is one of the typical meals of this Christmas date here in my country, in fact it is one of my favorites, that's why I enjoy and love both making and eating them.

    Each Venezuelan gives it his touch of flavor and seasoning, and even, there are countless ways to make our famous Hallaca, although you see that all end up wrapped in banana leaves and tied by wicks or strips of the same leaf, all have their touch of difference, some have an ingredient more and others an ingredient less, the fact is that today I am proud to present my recipe and my preparation of such an exquisite Christmas dish.

    The first thing I will show you is a list of the ingredients I used for these tasty hallacas, and they are the following.

    INGREDIENTS:

    Prey:
    ✓1 whole chicken breast.
    ✓1 kg of pork (chancho)
    ✓1 kg of beef (lomito de res)

    Stew and Decoration:
    ✓500gr olives
    ✓500gr raisins
    ✓100gr capers
    ✓1kg onion
    ✓300gr sweet chili
    ✓1.5kg paprika
    ✓1kg potato
    ✓500gr monte (onion, garlic, cilantro, coriander, cilantro)
    ✓1 head of garlic
    ✓8 eggs
    ✓2 ripe plantains
    ✓1 wine

    Seasonings and sauces to your liking:
    ✓Salt, pepper and savory.
    ✓Soya, anglaise and garlic.

    Dough:
    ✓2kg Corn flours.

    Lining:
    ✓4kg Leaves.
    ✓2 wick (rope).

    Now once I have all those ingredients on my table, clarifying that they are to my taste because each person puts the condiments or seasonings of your preference or with which you know best use, in my case I like them all and I like stews full of seasonings to have a mixture of flavors that make you lick your fingers 🤭.

    Well I will show you the step by step of my preparation, I will try to be as specific as possible because this excites me a lot and I end up talking about how many times I mix the stew or what music I put on when cooking hahahahahaha. By the way I like: Guaco, El Pollo Brito and many more 💃🏻🥂.

    PREPARATION:

    Stew:
    Boil the chicken breasts (onion, garlic and salt are added to the water), likewise boil the beef and pork. Once they are boiled, we remove all the meat, usually I always like to chop the beef in small pieces. The water from the chicken is saved for the masa and the stew.

    In a pan, fry the seasonings chopped in small pieces (onion, garlic, chili, paprika, monte,), after being well fried place the meats and stir in low flame, place the sauces (soy, English, garlic), seasonings (salt, pepper, cumin or sabroseador, paprika) to your taste and preference, after all the ingredients are mixed, add olives, raisins and capers chopped into small pieces.
    Add the wine (500 ml), add 3 glasses of water from the chicken broth that we set aside. Let it boil on a medium high flame.
    We grate two big potatoes and add them to the stew. This is to increase and to thicken it more.

    Let it cook for 30 minutes more. When it is ready, let it rest until it is at room temperature. Once it is done, strain all the stew, to avoid the liquid inside the hallaca. You can also add this flavorful liquid to the dough, although I let it thicken so much that I almost didn't get any juice out of the stew, but that's something 🤭🤤.

    Dough:
    Knead it kilo by kilo or as much as you can, add salt to taste and the waters of the chicken and stew that were left, add a splash of oil with onoto color to soften and give more color to the dough. Knead until smooth and let it rest in the container.

    Lining of the Hallaca:
    Clean the leaves and separate them by size, chop the wick with the measure of the first hallaca.

    Decoration:
    Place the raisins in wine.
    Chop the olives and 3 onions in slices and 3 bell peppers in julienne strips and place them in separate containers.
    Boil the 8 eggs and 8 potatoes, fry the plantains chopped in long strips. Once ready, the hard-boiled egg and the potato are chopped into slices and placed in separate containers.

    In this case I omitted the fried plantains, since I chose to put hard boiled eggs and potato in the Hallacas. But last year I decorated some of them with fried plantain slices and they were super delicious.

    Assembly of Hallacas:
    We strain in a container a little oil.
    Select the leaves and moisten them with oil to prevent the dough from sticking to the leaves.
    We expand it as much as possible, without leaving it too thick or too thin.
    We put a spoonful of the stew and spread it, then we add 2 to 4 strips of paprika, 2 or 3 slices of onion (depending on the size), 5 slices of olives and 3 raisins or more, depending on the size and taste.
    Then we add the ingredients that we want to have that Hallaca, either 2 slices of potato or two strips of fried plantain or 2 slices of hard-boiled egg.

    You can also add all the ingredients, but you must be careful that the dough covers all the ingredients and that it does not break.

    Place the hallacas in a pot of water and when it starts to boil, place the hallacas in the water and leave them there for 15 minutes.

    Remove the hallacas from the water, remove the leaves and ready to serve and eat. 😌💃🏻

    Of course the quantities are for more than 80 hallacas, in my case there were 76 because I like to eat too many hallacas, I always eat 3 or 4, and I like to have them left for January, because if they are kept in the freezer they could last a whole year and with the same flavor. I also like to share these tasty Christmas dishes with friends and my boyfriend's family (who is quite large), as there is no nicer way to wish them a Merry Christmas! Accompanied by an exquisite Venezuelan Hallaca.

    ¡Hola mis queridos amantes de la cocina! 👩🏻‍🍳

    El día de hoy les traigo una de las más tradicionales comidas navideñas de mi querida Venezuela 🇻🇪, como ya muchos de ustedes lo saben, La Hallaca es una de las comidas típicas de esta fecha navideña aquí en mi país, de hecho es una de mis favoritas, es por eso que disfruto y amo tanto hacerlas como comerlas.

    Cada venezolano le da su toque de sabor y sazón, he incluso, hay innumerables formas de hacer nuestra famosa Hallaca, aunque vean que todas terminan envueltas en hojas de plátano y amarradas por pabilos o tiras de la misma hoja, todas llevan su toque de diferencia, algunas tienen un ingrediente más y otras un ingrediente menos, el hecho es que hoy me enorgullece presentarles mi receta y mi preparación de tan exquisito plato navideño.

    Lo primero que les mostraré es una lista de los ingredientes que utilicé para estas sabrosas hallacas, y son las siguientes.

    INGREDIENTES:

    Presas:
    ✓1 pechuga de pollo completa
    ✓1 kg de cochino (chancho)
    ✓1 kg de carne (lomito de res)

    Guiso y Decoración:
    ✓500gr aceitunas
    ✓500gr pasas
    ✓100gr alcaparras
    ✓1kg cebolla
    ✓300gr ají dulce
    ✓1.5kg pimentón
    ✓1kg papa
    ✓500gr monte (cebollin, ajo porro, cilantro, culantro)
    ✓1 cabeza de ajo
    ✓8 huevos
    ✓2 plátanos maduros
    ✓1 Vino

    Condimentos y salsas a su gusto:
    ✓Sal, pimienta y sabroseador
    ✓Soya, inglesa y ajo

    Masa:
    ✓2kg Harinas de maíz

    Forro:
    ✓4kg Hojas
    ✓2 pabilo

    Ahora una vez tenga en mi mesa todos esos ingredientes, aclarando que son a mi gusto ya que cada persona le coloca los condimentos o aliños de su preferencia o con los que mejor sepa utilizar, en mi caso me gustan todos y me gustan los guisos full de aliños para que tengan una mezcla de sabores que te hagan chupar los dedos 🤭.

    Bien, les mostraré el paso a paso de mi preparación, trataré de ser lo más específica posible ya que esto me emociona mucho y termino hablando de cuántas veces mezclo el guiso o qué música coloco a la hora de cocinar jajajajaja. Por cierto me gusta: Guaco, El Pollo Brito y muchos más. 💃🏻🥂

    PREPARACIÓN:

    Guiso:
    Sancochar las pechugas de pollo (al agua se le agrega cebolla, ajo, sal), así mismo sancochar la carne de res y el chancho. Una vez sancochados, desmechamos todas las carnes, por lo general siempre me gusta picar en trozos pequeños la carne de res. El agua del pollo se guarda para la masa y el guiso.

    En una paila, sofreír los aliños picados en trozos pequeños (cebolla, ajo, ají, pimentón, monte,), luego de estar bien sofrito colocar las carnes y revolver en llama baja, colocarle las salsas (soya, inglesa, ajo), los condimentos (sal, pimienta, comino o sabroseador, paprika) a su gusto y preferencia, luego que todos los ingredientes se mezclen, agregamos aceitunas, pasas y alcaparras picadas en trozos pequeños.
    Le agregamos el vino (500ml), le colocamos 3 vasos de agua del caldo de pollo que apartamos. Dejamos hervir en llama media alta.
    Rayamos dos papas grandes y se las colocamos al guiso. Esto es para que aumente y para que espese más.

    Dejar cocinar por 30min más. Al estar listo se deja reposar hasta quedar a temperatura ambiente. Una vez así, se cuela todo el guiso, para evitar el líquido dentro de la hallaca. Este líquido lleno de sabor también se lo puedes agregar a la masa, aunque lo dejo espesar tanto que casi no le saco juguito al guiso, pero algo es algo 🤭🤤.

    Masa:
    Se amasa de kilo por kilo o hasta donde puedas, se le agrega la sal al gusto y las aguas del pollo y guiso que quedaron, se le agrega un chorrito de aceite con color de onoto para suavizar y darle más color a la masa. Amasar hasta suavizarla todo y dejarla reposar en el envase.

    Forro de la Hallaca:
    Se limpian las hojas y se separan por tamaños, se pica el pabilo con la medida de la primera hallaca.

    Decoración:
    Colocamos las pasas en vino.
    Picamos las aceitunas y 3 cebollas en rodajas y 3 pimentones en juliana y las colocamos en envases por separado.
    Sancochamos los 8 huevos y 8 papas, freímos los plátanos picados en tiras largas. Una vez listos, el huevo duro y la papa se pican en rodajas y colocamos todo en envases por separado.

    En este caso omití los plátanos fritos, ya que escogí colocarles huevos duros y papa a las Hallacas. Pero el año pasado decoré algunas con tajadas de plátano frito y quedaron super deliciosas.

    Armado de Hallacas:
    Colamos en un envase un poco de aceite.
    Seleccionamos las hojas y las humedecemos con aceite para evitar que la masa se quede pegada a la hoja.
    La expandimos lo más que se pueda, sin dejarla ni tan gruesa ni tan fina.
    Le colocamos una cuchara del guiso y lo extendemos, luego le agregamos de 2 a 4 tiras de pimentón, 2 o 3 rodajas de cebolla (dependiendo el tamaño), le colocamos 5 rodajas de aceitunas y 3 pasas o más, dependiendo del tamaño y el gusto.
    Luego le agregamos los ingredientes que queramos tenga esa Hallaca, ya sea 2 rodajas de papa o dos tiras de plátano frito o las 2 rodajas de huevo duro.

    También puedes colocarle todos los ingredientes, pero debes tener cuidado que la masa cubra todos y que no se rompa.

    Colocar en una olla agua, al comenzar a hervir, ir colocando las hallacas y dejar ahí por 15 min.

    Retiramos las hallacas del agua, le quitamos las hojas y listo para servir y comer. 😌💃🏻

    Por su puesto las cantidades son para más de 80 hallacas, en mi caso salieron 76 porque me gusta comer demasiadas hallacas, siempre me como de a 3 o 4, y me gusta que me queden para Enero, pues ellas guardadas en el congelador podrían durar hasta todo un año y con el mismo sabor. También me gusta compartir con amistades y familia de mi novio (que es bastante grande), de este sabroso plato navideño ya que no hay forma más bonita que desearles una ¡Feliz Navidad!
