It's official, December has just begun!
The truth is that I can't believe how fast this year went by, but I'm still glad to have December back...I just hope it doesn't end so fast, so I can make the most of it. Since this is my favorite month of the whole year, what better way to kick it off than by preparing a Christmas-themed breakfast?
My goal throughout this month will be to share fun recipes inspired by this holiday, in order to close this year 2021 on a high note. Basically for that reason I had weeks without sharing culinary content, because I was preparing for all the great recipes that you will see here on my blog during this month.
This December 1st I wanted to start it off by preparing a small edible tree with green pancakes...yes, that was my breakfast today. This time instead of using spinach to provide the characteristic green color, I used a few drops of vegetable coloring. This is not my favorite option, but once a year doesn't hurt.
The ingredients to make these pancakes are basically the same ingredients I usually consume in almost all my breakfasts: 4 tablespoons oat flour, 2 eggs, 1 and ½ teaspoons stevia extract, 1 teaspoon baking powder and 1 teaspoon vanilla essence. The only thing out of the ordinary was a few drops of green vegetable coloring to give the signature color.
I mixed all the ingredients together and let it sit for about five minutes. Then, in a very hot pan, I began to pour the mixture to make pancakes of different sizes, some larger than others, and then arrange them one on top of the other to resemble the shape of the Christmas tree.
For the final touch I decorated with some strawberries and banana slices, Greek yogurt and some Christmas colored sprinkles to make this pancake tree look like a real Christmas tree.
I must admit that this breakfast has been 100% healthy since the Sprinkles are sugary, but this does not matter too much because after all it is something that I am not used to consume constantly...it has only been for this occasion. I don't really use to decorate my desserts with this kind of things, but for this Christmas I have made the exception. Besides, there is no denying that the Sprinkles give it that special touch.
A funny anecdote behind this preparation is that, after assembling my little edible Christmas tree, I got distracted for a few minutes and the Sprinkles balls started to melt a little. As soon as I noticed this I ran to take the final pictures and in the middle of the rush I forgot to place the star on the top of the tree, but still the result was so cute that I didn't want to eat it.
I hope you liked this breakfast, I think it's great to prepare it for the kids or for those adults who, like me, love themed breakfasts.
Thanks for reading this post. See you next time!
