Good morning family !! Today is the turn for some delicious vegan tortillas.
The process is as follows: cook the yellow potatoes and the banana, and separate in a bowl we fry the vegetables, which are:
Garlic, green zucchini, carrot, archucha
For the mixture we use yellow corn flour with water, then the wheat flour is sifted and incorporated into the previous mixture, together with chia seeds. Add seasonings to taste: bay leaf, pepper, salt, oregano. After this, the sautéed vegetables are added to the mixture and put on medium-low heat
In a separate container we sauté some slices of aubergine 🍆 and add them to the mixture that is in the pan before it dries, as we can see in the photos.
Let it brown on both sides and it will be ready to delight the palate. We serve it together with the banana and potatoes.
