Bizcocho de limón para el cumpleaños de mi mamá || Lemon sponge cake for my mom's birthday

Mi mamá ama los pasteles con sabores citricos, en su día de cumpleaños intentamos complacer sus gusto, hace un año le hice un pastel con sabor a maracuyá una de sus frutas preferidas, intenté hacerle un bizcocho húmedo de limón, digo intenté porque se me presentaron varios problemas durante la cocción y no quedó como debería, me gusta hornear pasteles en mi horno electrico puesto que puedo controlar la temperatura, sin embargo, ayer mi horno me traicionó, falló muchas veces, a un punto tal de apagarse y al no darme cuenta la cocción se detuvo el bizcocho no elevo como debería, finalmente logré que se cocinará y aunque la esponjosidad no era la esperada el sabor salvó el pastel.

Para la cobertura simplemente batí la leche condensada con el limón, dejé reposar en la nevera 30 minutos y cubrí el pastel, es un postre que debe comerse frío, muy fresco y con fuerte sabor a limón, una verdadera delicia.

My mom loves citrus flavored cakes, on her birthday we tried to please her taste, a year ago I made her a cake with passion fruit flavor, one of her favorite fruits, I tried to make a moist lemon sponge cake, I say I tried because I had several problems during the baking and it did not look like it should, I like to bake cakes in my electric oven since I can control the temperature, however, yesterday my oven betrayed me, it failed many times, to the point of turning off and when I did not realize the baking stopped the cake did not rise as it should, finally I managed to cook it and although the sponginess was not as expected the flavor saved the cake.

For the topping I simply beat the condensed milk with the lemon, let it rest in the fridge for 30 minutes and covered the cake, it is a dessert that should be eaten cold, very fresh and with a strong lemon flavor, a real treat.
