In this video, I will show you one of the survival foods in my country that we usually eat, and we called it “kamote” or known as sweet potato. During World War 2 when Japanese occupied the Philippines, native Pilipino suffers food shortage they became clever aside from planting green leafy vegetables they planted root crops like sweet potato, yam, cassava and etc. Since we are experiencing pandemic Covid-19 it brings back to our history. We are dependent on root crops, especially in the countryside and it is our advantage as well because we are the main producers of vegetables.
As we all know root crops can be harvested from soil. So, it is necessary for us to dig and this is where your patience tested.
On this day, we harvested almost 3 kilograms of sweet potatoes which are good enough for our lunchtime.
We considered root crops a blessing because it provides my family’s needs in day to day life. In a week we can consume at least a total of 10 – 12 kilograms.
My sister is a good helper when it comes to cleaning freshly harvested sweet potatoes. You can simply wash these by removing the mud by your hands or use a smooth brush to clean.
Cooking sweet potatoes using firewoods can give satisfactory flavor because there is something unique when we cook it that way compared to modern equipment.
You can witness the good texture of the sweet potato. It tastes a little bit sweet and can surely make you full. It’s time to eat!
