Hello everyone, welcome to my blog. Today, I will be sharing a simple vegan recipe and hope you all enjoy it.
Potato is one of my favorite foods, and I have tried so many recipes with it, which include snacks as well. I just cannot get tired of this food's natural sweetness, plus it's really nutritious, and my body has a lot to benefit from it.
This time, I made potato porridge with a touch of veggies, and the outcome was fantastic. It's not my first time enjoying my potato this way, and it still tastes really great for me, just like the very first time I gave it a try.
I started by processing all the ingredients; I love having them ready for the preparation proper.
I peeled the back of the potatoes, cut them into smaller bits, washed them properly.

I boiled them in water with half teaspoon of salt.

After boiling until the potatoes were soft, I drained the water and kept the potatoes aside.
I washed the carrots and sliced them into smaller pieces.

I rinsed the peppers and sliced them.

I rinsed the onions and ginger before chopping them into bits.
Finally, I rinsed and chopped the spring onions as well.
I rinsed and soaked the green kidney beans in clean water.
With all my ingredients processed, I moved on to the preparation properly.
I heated my frying pan and turned the groundnut oil into the pan.

I added the onions to the frying pan and allowed it to fry for a minute under low heat.
The carrot came in after I added the green and kidney beans, pepper, ginger, and finally half a teaspoon of salt.

I allowed them to fry for about five minutes, still under low heat.
I didn't stop stirring to ensure that all the ingredients in the pot fried properly.
After the ingredients had fried properly, I turned the already boiled potatoes into the frying pan and stirred until all the ingredients mixed very well.
I allowed all the ingredients to cook again for three minutes under low heat.
Finally, I added the spring onions and stirred again.
This time, it only cooked for one more minute, and that's all. My potato porridge is ready, so I dish it.
This recipe is simple but very delicious and nutritious as well. It doesn't cost much, and you can have it anytime, any day.
