Hello everyone, welcome to another episode of Hive Learner's Creative Sunday Initiative with George Dee. It's a beautiful Sunday and I am excited to share another awesome recipe with every member of the Hive Learner's community.
For today's Creative Sunday Initiative, I made Chicken-Dodo Jollof rice. I am sure many of us are familiar with the Nigeria Jollof rice recipe since it is one of the popular meals you will find wherever Nigerians are gathered. It is a delicious meal and I just took things to a whole new level with the inclusion of chicken and plantain into the Jollof rice.
The outcome of the combination was more awesome than I thought it would be, it was delicious and very nutritious as well. The meal can serve as breakfast and can also be prepared at a gathering, I bet your guest will ask for the recipe after trying this yummy delicacy.

That's a whole lot of recipes but it's worth it and this reminds me of a Yoruba saying that Obe to dun, owo lo pa (A delicious soup requires money).
Anyone familiar with preparing Nigeria Jollof can learn this by just following instructions and it's best to watch the video to learn the basic tricks behind the preparation of this delicious delicacy.
The preparation of this delicacy started with cleaning the recipes and let's always remember that health is wealth.
I went on to process the recipes after cleaning, it's important for me because I want to have everything ready by the time I start the meal preparation properly.
I parboiled the rice first and while it was cooking, I went on to do other things.
I chopped the carrot, onions, onion leaf, and green pea into smaller sizes.
I cut half of the chicken into pieces and boiled all the chicken with seasoning, salt and onions. After boiling, I fried the chicken as well.
I heated the groundnut oil first and turned the green peas, green beans and carrots into the hot oil. I made sure the heat was low to prevent them from getting burnt. I added the onions a minute later and let them fry for another minute while I stirred them.
I added all the chicken after, the seasoning cubes, salt, curry powder and thyme joined the party as well and I stirred again for another thirty seconds before adding the tomato paste and blended red pepper.
I allowed them to fry under low heat for about four minutes and added some of the seasoned water I used to boil the chicken to boost the taste.
I allowed everything to fry again for a few minutes before adding enough quantity of water to finish the cooking of the rice.
Immediately after the sauce started boiling, I turned the parboiled rice into it and covered it to cook.
When the rice had become soft, I added the fried plantain and onion leaf.
I stirred the rice so that it would mix well with the other recipe and allowed the rice to cook again for another four minutes.
The satisfaction I got from the meal was 100% and I really enjoyed it. As I said earlier, it's delicious and packed with lots of nutrients from the veggies, chicken and plantain.
