For todays video we will be cooking Pork mechado
Pork mechado is a tomato sauce-based stew in the Philippines. It a simple recipe with simple ingredients too.
I already adjusted this recipe to my kids liking. I didn't add bell pepper and green peas because they don't like it but if you do, please feel free to add.
This dish is very versatile, if you don't eat pork you can replace it with chicken or beef.
Let's get cooking!
Here is the list of Ingredients:
1/2 kg pork shoulder cut in cubes
2 tablespoons lime or kalamansi juice
3 tablespoons soy sauce
2 tablespoons butter
3 cloves garlic
1 medium onion
1/2 cup tomato sauce
1 teaspoon salt
1 teaspoon pepper
1 cups water
1 large potato
2 medium carrots
Instructions:
Heat the pan and melt the butter. Saute garlic and onion.
Add the marinated pork including the the marinate liquid. Cook until pork turns light brown.
Add salt and pepper. Simmer.
Pour tomato sauce and water. Cover and let it boil for 30-40 minutes or until the pork is tender.
Add potato and carrots cubes. Cook for another 8 minutes.
Transfer to a serving bowl.
Serve with hot rice.
Enjoy!
I personally like to add "atchara" a fermented pickled green papaya as a side dish, but the dish alone with rice is already flavorful and delicious!
