Hello Foodies!
I was in the middle of preparing our lunch when I suddenly thought of recording the food I'm cooking and wonder if there's the same recipe in another part of the world.
Have you ever tried of "Tortang Talong" or Eggplant Omelette?
"Tortang talong" is Filipino fritter made of pan-frying grilled eggplant with meat fillings dipped in egg mixture.
Grill the eggplant, sauté the filling and pan fry. Sound complicated? Not really! It's easy I swear!
So Let's get started!
Here's the list of ingredients!
5 pcs eggplants
5 eggs
For the fillings:
8 ounces ground pork
2 medium tomatoes chopped
1 medium onion chopped
2 gloves garlic minced
cooking oil
salt and pepper to taste
Instructions:
1. Grill the eggplants until both sides turned black. Set aside and let it cool.
2. Meanwhile heat 2 tablespoons of oil in the pan and sauté garlic, onion and tomatoes
3. Add the ground pork until the meat turns brown add salt and pepper to taste then let it simmer for 3 minutes. Transfer to a bowl then set aside
4. Now peel off the eggplant skin, beat the egg in a separate bowl and be ready to assemble and fry
5. To assemble, using a fork flatten the eggplant in a plate put the sauteed ground pork on top then poured the beaten egg.
6. Heat the remaining oil in the pan then gently put the assembled eggplant in the hot oil, cook in medium heat.
7. After 3 minutes gently flip the other side and cook it for another 2 minutes.
8. Transfer to a plate and serve with hot rice.
This omelette is my kid's favorite so I always prepare it whenever they request for some. Try it! It's flavorful and easy to make!
