Today I took a shot at making Chinese style Salt & Pepper chips.
There is a Chinese restaurant near me which makes an amazingly tasty style of chip that has a light batter seasoned with salt/pepper and Chinese 5 spice powder.
I wanted to try recreating this, its actually a pretty quick and simple process.
I used pre cooked skin on beef dripping chips. There is a saying that "fat equals flavour" these beef dripping chips are all ready very flavourful so I thought they would be perfect for this.
These chips are also already cooked and have never been frozen so they can be ready to eat very quickly, especially if we fry them in oil.
To make our batter we add 2 eggs to a bowl and add some salt,pepper and our Chinese 5 spice powder.
Add 2-3 tablespoons of flour to the mix to thicken it up, this will help us achieve a nice crispy coating.
All we do now is add our chips a few at a time to our batter mix.
Get them nicely coated in the batter.
And add them to our oil.
This batch cooked very quickly, only 1-2 minutes in the oil and each chip was nicely golden brown and crispy.
Here is the resulting pile of beautiful tasty chips. It took less than 10 minutes to prepare this and the results were pretty outstanding, just as good as any I have had from a Chinese takeaway.
Crispy on the outside and soft and fluffy like a cloud on the inside, wanna try one? :D
Hopefully this inspires you guys to try this out ,Im sure whoever you serve them to will love them. I will certainly be making these again this weekend. The plate full I made didn't last long :).
