This video showcases traditional Filipino Wood Fire Hoem Cooking using a wood fire in a clay stove. In this video, I showed how "Sinampalukang Manok" or "Chicken with Tamarind" is cooked. Chicken with tamarind is one of the most popular dishes in our country it is loved by everyone. Chicken with tamarind is also a very versatile dish, vegetables can be added such as Radish, Mustard, Tomato, String Beans, and Cabbage. In its simplest form, chicken with tamarind is cooked using only chicken and tamarind plus the spices.
Chicken with tamarind is the best to cook using a native chicken (those that roam free and are raised by locals, not those that are raised from poultries) and it is best to use "young tamarind leaves and young tamarind flower shoot.
Back in the day, chicken with tamarind is only cooked on Christmas Eve and New Year's Eve along with "Tinolang Manok".
