This video showcases traditional Filipino Cooking specifically Traditional Ilocano cooking featuring PAKBET/PINAKBET. This dish is a part of the culture of Ilocanos. I myself, Pinakbet is one of my favorites. It is very simple yet nutritious and healthy since it consists of vegetables. In its simplest form, a pinakbet dish is only consisting of Eggplant, Bitter Gourd, and Sweet Potatoes with fish sauce added to make it tasty. Aside from the ingredients that I mentioned here are some of the vegetables that are usually used to cook pinakbet: Cabbage, Okra, String Beans, Lima Beans, Dolichos lablab, Tomato, Squash, Winged Bean, Onion, Moringa Drumstick, and Green Pepper. And to level up the tastiness of pinakbet fried pork, fried fish, and chicharon are added. I was born into an Ilocano family, my father used to cook this dish, and I learned to cook this dish by watching how my father prepare and cook it. Aside from the father, my two elder sisters would also cook this dish on an almost weekly basis further giving me the knowledge of how to cook Pinakbet.
My first few attempts at cooking this dish always end up very salty, but then I found out that I don't have to use too much fish sauce. Tomatoes make the soup a lot tastier. Some grandparents would add cooking oil to their pinakbet making it tastier.
