Para esta ocasión les presentaré la preparación de un postre frío sencillo, delicioso y con una presentación suculenta. Es una Marquesa Firme de Leche, claramente es una variante de la famosa Marquesa de Chocolate, pero con un toque más dulce. Esta receta me encanta, porque es totalmente firme y por su presentación se convierte en la opción perfecta para cumpleaños o alguna reunión especial.
Este tipo de postre es el favorito de mi esposo, había tenido días diciéndome que le preparará esta receta, pero por cuestiones de tiempo no había podido. Les cuento que las Marquesas son un postre bastante significativo para nosotros, puesto que hace años atrás cuando no eramos novios, yo vendía de estos postres en porciones para costear los gastos de la universidad. Entonces mi esposo (en ese entonces solo mi amigo), compraba varias veces a la semana para así tener una excusa de verme. ¡Sin duda un Picarón!
La usual Marquesa carece un poco de firmeza, lo que la confina a estar siempre en su molde de armado. Esta marquesa es firme y por ende nos brinda la posibilidad de desmoldar tranquilamente. Esta característica se le confiere a un mayor agregado de maizina, también podrían suplantarle en porciones iguales con Gelatina sin sabor.
Para un desmolde satisfactorio, unta unas gotas de aceite en el molde y esparce por todo el interior del mismo. Esto, antes del armado.
Las galletas en una marquesa generalmente se humedecen hasta semi ablandar con leche azucarada y vainilla. Sin embargo, para una marquesa firme puedes humedecer un poco las galletas sin llegar a ablandar. O quizás, omitir este paso colocando más bien una capa de leche condensada para que solo aporte un poco de humedad. Así, se obtendrá una mejor estabilidad.
Refrigera 6 u 8 horas antes del desmolde. Esto ayudará a que la Marquesa esté bien fría y haya adoptado correctamente el armado.

For this occasion I will present the preparation of a simple, delicious cold dessert with a succulent presentation. It is a Firm Milk Marquise, clearly a variant of the famous Chocolate Marquise, but with a sweeter touch. I love this recipe, because it is totally firm and due to its presentation it becomes the perfect option for birthdays or any special gathering.
This type of dessert is my husband's favorite, he had been telling me for days that he would prepare this recipe for him, but due to time constraints he had not been able to. I tell you that the Marquesas are a very significant dessert for us, since years ago when we were not dating, I sold these desserts in portions to pay for university expenses. So my husband (at that time just my friend) would shop several times a week so he would have an excuse to see me. Definitely a Rogue!
The usual Marquesa lacks a bit of grit, which confines her to always being in her build mold. This marquise is firm and therefore gives us the possibility to unmold calmly. This characteristic is given to a greater addition of cornstarch, they could also replace it in equal portions with Unflavored Gelatin.
For a satisfactory release, spread a few drops of oil on the mold and spread all over the inside of it. This, before the assembly.
Cookies in a marquise are usually moistened until semi-soft with sweetened milk and vanilla. However, for a firm marquise you can moisten the cookies a little without softening. Or perhaps, skip this step by placing a layer of condensed milk instead so that it only adds a little moisture. Thus, better stability will be obtained.
Refrigerate 6 or 8 hours before demoulding. This will help the Marquise to be very cold and have correctly adopted the assembly.
