    About :

    My mother used to cook puto as her extra income as a housewife. She sell her puto on some of our neighbors back when I was small. As I grow seeing her cooking makes me learn also on how to cook puto.

    As the General Community Quarantine extends. Me and my brother starts to sell puto here in our subdivision as our extra income. Up to now we cook it for breakfast and merienda during afternoon.

    PUTO PANDAN
    (FILIPINO STEAMED CAKE)

    WHAT IS PUTO

    PUTO is a Filipino steamed cake snack that is served anytime of the year. Puto is perfect for breakfast with your usual coffee or chocolate drink, and also for merienda during afternoon. It is traditionaly made from ground rice, water and sugar, and can be eaten by itself, or with butter. This can also be topped with cheese or salted egg.

    However this puto recipe is adapted using cake flour instead of ground rice. And to have a twist, I add color and flavor of pandan from the the usual puto.

    INGREDIENTS
    8 cups All purpose flour
    1 pack Baking powder (CALUMET) 50g
    250g Butter and Margarine 250g
    1 can Condense Creamer 390g
    5 cups Water
    4 tbsp pandan flavor
    3 drops of food color
    Oil for greasing puto molder

    PROCEDURE

    ​Fill the steamer with water and set over high heat.
    ​In a bowl, Using a strainer sift all purpose flour to remove lumps. Add baking powder and sugar.
    ​Using a wire wisk mix it well and set aside.
    ​In a small pan, melt the butter and margarine over medium flame. (I mix it with margarine to have additional aroma and flavor.)
    ​In a separate bowl put the melted butter and water. Mix well
    ​Add the wet ingredients gently into the batter mixture.
    ​Add the condensed creamer.
    ​Put 4 tbsp pandan flavor.
    ​Add 3 drops of green food color
    ​Mix well, but slowly (don not overmix). Avoid using high speed when mixing the batter as this crates more air bubbles that can be trapped in the batter as this creates more air bubbles that can be trapped in the batter and will form holes when steamed.
    ​Pour in molder. Fill only 3/4 of the molder as it will rise as you steam.
    ​Arrange in steamer.
    ​Put the steamer when the water starts to boil. Bring the water to simmer then turn the heat to the lowest as possible. Just enough to keep the steam forming but do not let the water boil. High temperature will result in an even rise of the batter instead of forming a perfect dome.
    ​Cover. Put cloth in the lid to prevent the steam from dripping to the batter. This will result in an even cooking and disformed top.
    ​After 5 minutes, put the cheese on top.
    ​Steam for another 10 minutes. Do a toothpick test if cook, if it comes out clean, it's ready.
    ​Let it cool a little before removing form molder.
    ​Enjoy eating! Serve hot with a coffee or hot chocolate.
