Today I made sautéed vegetables, rice with coriander and beetroot.
The ingredients I used are as follows
Vegetable ingredients:
½ Eggplant
½ red pepper
1 small onion
¼ beetroot
1 tablespoon of oil
2 tablespoons Chinese sauce
2 small sprigs of thyme
1 tablespoon ground oregano
1 tablespoon salt
Rice ingredients:
2 cups of rice
3 ½ cups water
1 tablespoon salt
2 tablespoons oil
1 handful of chopped coriander
First I prepared the rice to make better use of the time, (while the rice was cooking I was chopping the other foods). To prepare it, I put two cups of rice in the rice cooker, proceeded to wash it, then added 3 ½ cups of water, 1 tablespoon of salt (I stirred it and checked to see if it was necessary to add more salt), after that I added two tablespoons of oil; when the rice was about to dry I added the coriander.
On the other hand, to make the vegetables, first cut the aubergine, the red pepper and the small onion, I put them in the pan, I left them on low heat. 5 minutes later I added a spoonful of oil, two spoonfuls Chinese sauce, two small sprigs of thyme, a spoonful of ground oregano and a spoonful of salt.
I chopped the beetroot into pieces but did not cook it. This time I decided to eat them raw, as they contain more of the available nutrients.
