Today I tried making some Hokkaido style burger buns let me show you how they turned out.
Here is everything we need...
First of all we add 300g bread flour or strong white flour to a mixing bowl and add 2 tablespoons of sugar and half a tablespoon of salt.
Next we are going to add our yeast to half a cup of warm milk. You want the milk to be warm but not to hot. For this recipe I used 7g of fast acting yeast.
Let the yeast sit in the warm milk for around 10 minutes and while it is activating add 6 tablespoons of water and 2 tablespoons of flour to a saucepan and mix it until it looks like this.
Adding this mixture to our dough helps the dough to get a little fluffier and softer on the inside.
Ok so now we add our yeast milk and the flour/water mixture we made to our flour/salt/sugar mix.
Kneed everything by hand until the dough is nice and smooth and not to sticky. You can add small amounts of flour so the dough is easy to work with and doesn't stick to your hands.
Next we add in 25g of butter and one whole egg + one egg yolk
Kneed the mixture again adding small amounts of flour until your dough is nice and smooth. Add a little olive oil to your dough ball so it wont stick to the bowl it rises in.
Add a little oil to some cling film...
Put your dough ball back in your mixing bowl or pot and cover with the film...
Put a towel over it and leave it for 1-2 hours or until the dough doubles in size.
When the dough has risen make some wholes in it to let out some of the gases that have built up. Now our yummy dough is ready to work with :).
Cut your dough into pieces big enough to make buns , the size can vary alot here but generally these buns will double in size when they are baked so judge how big you want the buns to be and add them to a baking try.
Cover the buns with more oiled cling film and let them rest for 45 minutes.
Ok now is time to bake them!Depending on your oven they will take around 15-20 minutes to cook.Brush them with egg wash before putting them in the oven,this will help them get golden brown and shiny on the top.
Lovely golden brown buns...not bad for my first attempt :)
The inside is light and fluffy ,they have the smell of warm bread and butter when cut open.
Ok we have nice buns now we need a burger to go with them.I added some fresh thyme a glove of garlic and some salt and pepper to my burger and basted it with butter.
Use a spoon to pour the hot butter over the thyme and garlic and your burger will taste amazing.
You can toast the inside of your buns in the seasoned butter....mmmmmmm :P
Add some cheese...
And your favourite toppings and sauce...
And Viola....we have a beautiful looking burger!
This was one of the tastiest burgers I have ever eaten, the fluffy butter bun really add to the flavour and the overall presentation. I'm definitely going to make these buns again.
I still have alot of the dough left over. I think tomorrow I'm going to use some to make a nice garlic/cheese bread.
