This video is all about cooking one of my personal favorite dishes, it is called "Pakbet or "Pinakbet". Pinakbet is an Ilocano favorite dish, every Ilocanos love it. Pinakbet also has many variants but they all use fish sauce (Bagoong). Without the fish sauce, it will never be called Pinakbet. Back when I was young, my family would cook pinakbet using eggplant (round), bitter gourd, sweet potatoes, and fish sauce and that's it you can now cook pinakbet using those ingredients. But it can be upgraded by adding Moringa Drumstick, Cabbage, Tomato, Pumpkin/Squash, Lima Bean, String Bean, Onion (whole), Okra, Pigeon Pea, Bataw, and Winged Bean. But then again you can level up that upgrade by adding either of these: fried pork, fried or grilled fish (I prefer Milk Fish and Tilapia). Most of the time cooking Pinakbet is done with all the ingredients in a pot then water is added and when it boils the fish sauce is added and that's it. Some would cook pinakbet by sauteeing the tomatoes, which is actually the one that I am going to show you today.
Fun Fact
This is actually the first time that I am going to cook Pinakbet this way (Ginisa). I knew and I have seen someone cook this way and I knew that it is equally delicious as the traditional way of cooking pinakbet.
